Grapes were hand-picked into half-ton bins and brought to the winery. e fruit was then gently destemmed and delivered into the top of the fermenter. A er a short cold soak, grapes were inoculated with yeast. Once fermentation was complete, they were pressed o skins into another tank, then racked o heavy solids into a mixture of new and neutral 100% French oak.
TASTING NOTES:
This age-worthy Cabernet Sauvignon has notes of bright red fruit, clove, caramel, dark red cherry, cola, and cinnamon toast. e mouthfeel is persistent and elegant with supple, velvety tannins. e wine is rounded out by a savory, long nish.
